Château Roasted Barley from Castle Malting is a highly roasted barley malt, noted for delivering a robust burnt and coffee-like flavour profile. Roasted to temperatures up to 230°C, it lends depth and a rich red-mahogany hue to dark beer styles such as stouts and porters. This unique malt variety adds dryness, complexity, and a distinctive roasted edge, especially beneficial for creating depth in darker ales. It also enhances sweetness and contributes lightly to the beer’s gravity.

Description

What is Château Roasted Barley?
Château Roasted Barley is a raw barley malt roasted to an intense degree, developing complex flavours ideal for darker beer styles. With no malting or germination process, it is uniquely roasted at high temperatures, resulting in an intensified roasted taste similar to coffee or chocolate notes, adding a savoury balance to dark brews.

How to Use Château Roasted Barley
This malt is versatile within specific styles; typically, a 2–4% inclusion in brown ales or 3–10% in porters and stouts is sufficient to impart its distinctive flavour. It’s a non-enzymatic malt, meaning it doesn't convert starch to sugar, but a small amount of starch present can still contribute to the beer’s gravity during mashing.

Flavour Profile
Château Roasted Barley has a strong roasted flavour with deep coffee, chocolate, and nutty tones. It offers a dry, clean bitterness, rounding out the sweet malt base of darker beers, particularly in stouts.

Enzymatic Activity
As a roasted malt, Château Roasted Barley has negligible enzymatic activity, making it non-ideal for mashes that rely on enzymatic starch conversion.

Mashing
Roasted barley can be mashed alongside other base malts to contribute its unique flavour without overly altering the mash pH or requiring complex adjustments.

Combining with Other Malts
Pair Château Roasted Barley with chocolate, black, or caramel malts for added depth. It complements other dark malts by enriching the roasted character without excessive bitterness.

Benefits of Château Roasted Barley
Apart from its rich flavour, Château Roasted Barley enhances the beer's colour and adds body, creating a bold and distinctive profile essential in dark ales and robust beers.

History
Roasting grains has a long-standing history, with roasted barley becoming particularly popular in 18th-century stouts. Its addition allowed brewers to achieve unique, roasted profiles that distinguished their stouts and porters.
