When you add carbonation drops to your beer, you're essentially providing a feast for the yeast that remains in your brew after fermentation. These drops are made of sugar, and yeast thrives on sugar.
As the yeast consumes the sugar from the carbonation drops producing alcohol and carbon dioxide (CO2) as by-products. In the sealed environment of a beer bottle, the CO2 has nowhere to escape, which leads to it being dissolved in the beer, creating carbonation.
This is the same principle that applies during the initial fermentation, but now it happens in a closed bottle, so the CO2 is trapped. This trapped CO2 is what gives your beer the pleasant effervescence and the characteristic mouthfeel that is so enjoyable in carbonated beverages.
