Dextrose is a versatile tool for brewers to tweak alcohol levels, carbonation, and mouthfeel without significantly altering the beer's flavor profile.

  1. Efficient Fermentation: Dextrose is 100% fermentable, allowing yeast to quickly and completely convert it into alcohol and carbon dioxide, ensuring a clean fermentation process.
  2. Neutral Flavor: Unlike malt-based sugars, it contributes no additional flavor, preserving the intended taste profile of the beer.
  3. Versatile Usage: Ideal for priming during bottling to achieve perfect carbonation or for boosting alcohol content without altering the beer's body or sweetness.

Description

Dextrose Monohydrate, often referred to simply as dextrose, is a simple sugar (glucose) commonly used in beer brewing for specific purposes.

What Is It?

  • Chemical Composition: Dextrose Monohydrate is a monosaccharide derived from starch, typically corn or wheat. The "monohydrate" part refers to the single water molecule attached to its crystalline structure.
  • Form: It is a fine, white powder that dissolves easily in water.

Uses in Beer Brewing

Priming Sugar:

  • Used during bottling to carbonate beer naturally.
  • The yeast ferments the dextrose, producing carbon dioxide, which dissolves into the beer, creating carbonation.

Gravity Adjustment:

  • Can be added to increase the specific gravity of the wort, boosting alcohol content without significantly impacting the flavor.
  • Unlike malt sugars, dextrose is almost 100% fermentable, leaving little to no residual sweetness.

Adjunct Brewing:

  • Commonly used in certain styles (e.g., Belgian ales) to lighten the body, dry out the finish, or achieve a specific alcohol level.

Energy Source for Yeast:

  • Provides a quick, easily digestible sugar for yeast, aiding in fermentation.

Why Use It?

  • Neutral Flavor: It doesn’t add malty or sweet flavors, ensuring that the beer's profile remains focused on other ingredients like malt, hops, and yeast.
  • High Fermentability: Fully fermentable, leading to cleaner finishes compared to more complex sugars.

Dosage & Application

  • Dissolve the required amount in water (boiling is recommended for sterilization) before adding it to the wort or during bottling.
  • Typical priming sugar dosage is around 4-5 grams per liter of beer.

Beer Styles Where It's Commonly Used

  • Belgian ales (e.g., Tripels, Dubbels)
  • Pale lagers
  • IPAs (to dry out and boost ABV)
  • Any beer requiring controlled carbonation during bottling.
