Dark New England IPA combines a smooth, full-bodied texture with rich, roasted malt character and intense hop aroma.

Description

Dark New England IPA All-Grain Kit (25 Litres)

A soft, creamy body from oats and wheat, balanced by a lightly roasted malt character. Heavy dry-hopping with Citra, Centennial, and Mosaic delivers an explosion of tropical aromas, citrus, and passion fruit that plays elegantly with the dark malt base. The result is an intense, juicy and complex IPA – dark in colour, but fresh and rich in fruity flavour.

  • Alcohol: 6.7% ABV

Ingredients

Malt:
4800g Pale Ale, 800g Flaked oats, 500g Flaked wheat, 200g Crystal, 400g Chocolate, 200g Special B malt.

Hops:

20g Mosaic (10 minutes – for flavour)

50g Citra + 50g Centennial (Hop stand)

50g Citra + 50g Centennial + 50g Mosaic (Dry hop for the final 5 days of fermentation)

Yeast:
New England East Coast Ale Yeast, 11 grams

 

Brewing Process

Mashing:
65°C for 60 minutes, followed by a mash-out at 78°C for 10 minutes.

Boiling:
60 minutes with hop additions as listed above.

Fermentation:
Ferment at 20°C for approximately 14 days.

Day 14:
After 14 days, bottle the beer. Take a final gravity (FG) reading using your hydrometer. For bottle conditioning, add boiled sugar water (6g of sugar per litre of beer) to a sanitised bottling bucket before transferring the beer into it (alternatively, use carbonation drops). Then bottle the beer and store it at room temperature.

Day 28:
The beer is now carbonated and ready to drink. Store it in a cool cellar at 13°C–17°C.
