Labrew BRY-97 is an American west coast ale yeast. It is known for its ability to produce high quality ales. Bry-97 has a neutral flavor with a high flocculation which is good in many American-style beers. Traditional Ales brewed with Bry-97, but not limited to, are: American Wheat, Russian Imperial Stout, Cream Ale, Scotch Ale, American Pale Ale, American Amber, American Brown, American IPA, American Stout, Imperial IPA, Old Ale, Roggen/Rye and American Barley wine.
Aroma: Neutral with slight ester
Percent solids: 93% - 97%
Viability: ≥ 5 x 109 CFU per gram of dry yeast
Bacteria: < 1 per 106 yeast cells
Flocculation: High
Attenuation: Medium to high
Fermantation Range: 15 - 22°C (59 - 72°F)
Alcohol Tolerance: 13% ABV
Pitching Rate: 50-100g/HL
Vigorous fermentation that can be completed in 4 days.
