For ales with a rich full body, this top-fermenting yeast is suitable for a variety of Ale styles.
Fermented at correct temperature the Empire Ale will show of in full power the aromas of dark fruit.
Carefully selected this yeast strain will give a nice sweet character to the beer, and the fruit flavors will come through.
Be careful and adjust the bitterness of the beer, to avoid an overly sweet end result.
Higher alcohol beer has a tend to be very sweet and heavy, however a lower mash temperature can help avoiding this and lower the final gravity.
